I am opposite in the kitchen. If it says soft brown sugar and I have icing sugar I go, “oh well,” and stick it in. That’s why much of what I make used to fuck up. I think I’m different now, growing up has made me actually follow recipes rather than use them as a general guide. Looking forward to the bread. I tried to make it under pressure of a dinner party and messed it up. I shall try again though.

You are delightfully neurotic in the kitchen! Ten bonus point for using the King Arthur. I do think it makes a difference. I also think that the enamel pot is fine. The first time I made it I used pretty much the exact same one: a big lightweight black & white fleckled number and it turned out fine.
